Grilled food tastes great any time of year, but there's just something special about barbecuing in summer. The feeling of charring meals at 200 degrees, slathering everything in a thick, sticky layer of bbq sauce, and clicking the tongs together....you know....to be sure they work.
Now that I'm on vacation, I've had much more time to do cooking at home (since I'm actually home for dinner, now). Sunny days usually mean chucking massive amounts of meat and veg on the grill, then enjoying our meal with a cold, refreshing beverage outside in the summer sun.
When I grill, I usually like to keep it pretty simple since the grill imparts so much flavour itself. My husband is very much a sausage and potato salad kinda guy, but hey, that's also a pretty awesome meal. Beer-Braised Pork Ribs - As mentioned in my 4th of July post, these meaty loin ribs are braised on low heat in beer, onion and spices to make them super tender. They are then slathered in bbq sauce and grilled to sticky perfection.
Crazy Easy Chili Lime Corn - Remove silk and grill corn whole, then blend the corn kernels with lime, butter, chili flakes, salt and pepper for a delicious side packed with flavour.
Maple Mustard Salmon - Fresh salmon fillets are seasoned and brushed with a maple syrup and whole grain mustard glaze, then grilled and caramelized for a sweet and sour salmon experience.
